Whey Concentrate vs. Isolate vs. Hydrolysate: What the Processing Actually Changes

"Whey protein" on a label can mean three pretty different products, and it's not just marketing spin — it comes down to how much filtering the raw whey goes through before it gets dried into powder.

Concentrate: the least processed

Concentrate gets the least filtration, so it holds onto more of the natural lactose and milk fat. You're typically looking at 70-80% protein by weight. It's also the cheapest to make, which is why it's the base of pretty much every budget protein powder out there — and probably the worst option if you're lactose-sensitive but not fully intolerant.

Isolate: filtered further

Isolate goes through extra filtration — usually cross-flow microfiltration or ion-exchange — specifically to strip out more lactose and fat, which pushes protein content up over 90% by weight. Costs more to make, costs more on the shelf. If you're actually managing lactose intake, isolate is a real difference, not just a fancier label.

Hydrolysate: pre-broken down

Hydrolysate takes that filtering a step further and uses enzymes to pre-break the protein into smaller peptide chains before you ever see it — basically doing part of the digestion work for you. That's the whole pitch behind "faster absorption," and it does digest quickly. It also tends to taste more bitter and costs the most of the three, for what it's worth.

None of the three are lactose-free

Worth being blunt about this one: all three are still milk-derived protein and legitimate dairy allergens. Isolate cuts down lactose, it doesn't remove the allergen. If you've got an actual milk allergy — not just lactose sensitivity — none of these three are for you. You need a real dairy-free protein, like pea or rice, not just a more-filtered whey.
